Tahara-san, the master knife-sharpener from Sakai City, was in New York for the Restaurant Show and today he was holding a knife-sharpening demonstration at Korin.
After exchanging emails and keeping in touch for almost a year now, I wasn't going to miss this for anything.
This man is an honest Japanese hero.
Can't wait to see him again in a few days.

Menkuitei...
Day 1281:
Today I felt like eating ramen.
And Menkui-Tei was the closest bowl I could find to satisfy my shoyu craving.
It was satisfactory.
Korin!!
Definitely the highlight of my day.
Everything deserves a voice.
And everyone deserves to be heard...
