The lesser cuckoo...

Day 210:

One of the newer shops listed in the Tokyo Nostalgic Ramen book is Soba House Hototogisu located in Hatagaya. Opened in 2006, it's supposedly a new style shoyu that can still invoke a nostalgic feeling. When I looked up the meaning of hototogisu (不如帰), all I got was 'lesser cuckoo'. I'm not exactly sure what that really means so let's just go with it.


My first sip was greeted by an unexpected flavor that completely caught me off guard. It wasn't bad nor was it good, just unexpected. After a few more sips, a total balance of flavors began to appear. But I could still taste the clam-like essence in the background. Sure enough, after discussing this unexpectedness with my coworker later on, he confirmed the use of clams in their soup.


The noodles were very elegant and matched the soup well. Overall, this was a very good ramen, but I was hoping for a more intense shoyu flavor.


Later in the day, Tokyo Walker came into Bassanova to do and interview and a photo shoot of our ramen.


This is gonna be big for us. Be sure to look out for the issue later this month!


Remember Jay? The guy who was also pursuing a ramen dream like mine? Well, after a couple months of training at a ramen shop in Kanagawa, he will be leaving Tokyo at the end of the week to train at a ramen shop in Hokkaido. He came in to Bassanova tonight so we could catch up on the past few months of life.

    Being an amateur ramen fan, I hope to one day take a ramen tour of Japan and visit your shop.
