The simple ramen life...

Day 874:

A simple Mabo Ramen lunch can spice things up a bit...


But eating ramen from a yatai (ramen cart) at 2am can really put your mind at ease.


It's just a simple shoyu ramen...


Served from a simple pot of local ingredients...


Made by a simple man who just loves making ramen. You gotta love it!


uuuh...this is not a simple man. haha.


btw, An-san (above) is quitting his job at the end of the month so this will probably be the last time you see him.

    i really liked your blog but it's getting a bit boring to read 2 months old stuff, and to be honest nobody will really care what you ate 7 weeks ago, or 6 weeks and 6 days ago...

    So why don't you just jump into present time and post stuff from today?

    I guess a lot of people would be interested into what's going on in the ramen scene, you could also post cooking advice for people, e.g. how can i best roast chachu? how do you make a soup stock. sure you'll not want to spill your secrets, but even more general stuff would be really good to know.

    then you could write stuff about the different soup bases and noodle kinds. basically all that stuff that is in japanse ramen magazines but that nobody will ever know in english.

    then you could post advice on how to run a shop in tokyo. operational stuff like, how you deal with authorities or food safety, probably foreigners need some sort of work permit, maybe it's hard to get a liquor license, are there some unwritten rules on how to act towards your neigbors/competition.

    in any case youre in a unique position, cause you are in that world and speak english and have a platform, so there is tons of stuff that you could post! :D

  2. yeah i know it sucks to be so behind in my blog but if i skipped to present time you'll miss my trip to kyushu and not to mention the week i spent in Shikoku at the Ramen Gakkou, the same one where Ivan went. anyhow, thanks for your opinion.
