Miso chashu...

Day 1094:

Shinkyotei (進京亭) has slowly become one of my more favorite ramen shops. For one reason, it is straight old-school! If you've been there, you'll know what I'm talking about. If you haven't, then this should be one shop on your must-try list. But let me warn you first. This shop is not for the novice ramen slurper.

The shop owner looks and sounds (yes his voice is incredibly intimidating) like he used to be a pro-wrestler. Deep down I think he's a nice guy (think!) but always wait until he acknowledges you first before you order. Basically, wait until he gives you a glass of water.

Arguably, the best ramen on the menu is this Miso Chashu (味噌焼豚メン). It's written on the menu as Miso Yakibuta Men, but just say Miso Chashu and he'll understand. The Torisoba is also considered one of their best.

The handmade egg noodles may not be what you're used to, but go ahead...let them get a little soggy.

With so many new shops getting all the attention lately, it's good to know that these old-school shops, that have been around for more than twenty years, still exist. Don't be afraid to try them!
